Aki Fresh Mex opened its doors for business on January 18, 2020 and since then the journey has been a bumpy one because of the pandemic. However, Isabel Escorcia the owner of Aki Fresh Mex has been staying confident that things will get better.
Isabel worked at Cantinetta Lucas in Carmel for four years and during that time she began her own catering business with the encouragement of her friends. She named her catering business Aki Fresh Mex which comes from the idea “Right here fresh Mexican food, I was prepping food for that event, right here fresh.” When the opportunity of a vacant space being put up for rent in Marina, Isabel took it, and this is how Aki Fresh Mex the restaurant came to be.
Aki Fresh Mex became a Blue Zones Project Approved Restaurant in November 2021. Blue Zones Project Monterey County is community-wide well-being improvement initiative to help make healthy choices easier for everyone in our community. A restaurant that achieves approval is showing a commitment to creating a healthier community and promoting a culture where the healthy choice is the easy choice.
Although Isabel does not consider herself a vegetarian, she wanted Aki Fresh Mex to have options on her menu available for everyone. Therefore, with a few slight modifications Aki Fresh Mex now offers a variety of delicious plant-based dishes which can be found on their Blue Zones Inspired Dishes menu.
